It's good to be a jerk...
I can't say enough about the Jamaican Jerk Seasoning from Holy Smokers Rub Co. My first use was on a whole chicken. I used duck fat spray for a binder and then spread the rub liberally over the chicken. It cooked to perfection a light smoke and loaded with flavor from the rub. The skin was crisp and it was all flavorful. I then took some of the leftover chicken with and made jerk chicken tacos. Again, quite good. I stlll had some chicken left so I went on and made a jerk chicken salad. I added a tablespoon or so of the seasoning to my chicken salad (there was fresh pineapple in there too) and it was so nice. It made for a great, quick, loaded-with-flavor sandwich. And it's not too hot either. I encourage you to give it a try.
