Who knew these Chicken Quarters could be so "Sinfully Delicious"? Here, we are
pairing together our Rooster Sweet & Rooster Spicy Chipotle. Let's take flight!
Basic Info:
Prep time: 15 min. Cook time: 1.5 hours. Difficulty: 2 of 5. Serves: 4-6. Wood Type: Cherry/Charcoal
Ingredients:
- HSRC The Rooster Sweet
- HSRC The Rooster Spicy
- Olive Oil Spray
- Spray Butter
- 4-6 Chicken Quarters
- BBQ Sauce of Choice
Steps:
1. On a tray, use olive oil & spray the chicken all over.
2. Season liberally with "HSRC Rooster Sweet & Rooster Spicy Chipotle" to all sides.
3. Start smoker/grill and set to 350 degrees. When grill is ready, place the chicken breasts on the grill for a smoke bath.
4. Tip: Cooking below 275 for long time periods dries the chicken out and makes rubbery skin. You can add some "baking powder" to the seasoning to help crisp the skin.
5. After 30 minutes, flip the chicken and spritz with spray butter. Internal goal is 175 degrees to completion.
6. In the last 10 minutes, sauce these protein quarters. Here the goal is to add smoke flavor to the sauce and tack up the bbq.
7. Once internal is correct for dark poultry cuts, pull and rest for 5 minutes before serving.
