Experience a vibrant explosion of flavors with Blackstone Jamaican Jerk Chicken Street Corn Tacos, featuring Holy Smokers Jamaican Jerk Seasoning. Succulent jerk chicken paired with smoky street corn, wrapped in warm tortillas and topped with fresh lime crema, delivers a taste of the Caribbean in every bite.

Ingredients:

- HSRC Jamaican Jerk Rub

- Olive Oil Spray

- 1/2 Cup Cilantro

- Yellow Onion Diced

- 2 Large Limes

- 3 Chicken Breasts

- Fresh Cut Salsa

- Southwest Guac

- 6-8 Flour Tortillas

- Beef Tallow/Olive Oil

- Butter

- Taco Holder

Instructions:

  1. Prepare Chicken & Season with Flavor:
   - Place the chicken on a cutting board and slice it into small strips.
   - Generously sprinkle Holy Smokers Rub Co Jamaican Jerk seasoning on all sides of the chicken for an explosion of flavor. Add a few pats of butter, some beef tallow, and 2 TBS of olive oil to the bowl with the chicken.
  1. Prepare the Corn:
   - Take your can of whole corn kernel, drain & rinse, then place into a small bowl. Coat it with olive oil, season with HSRCo Diablito Chili Lime to taste. Also, place a few pats of butter and beef tallow into the bowl.
  1. Preheat Blackstone Griddle:
   - Set your griddle to a temperature medium heat. Once preheated, place the seasoned chicken breasts on the griddle on half, and place the corn on the other half.
  1. Prepare Fresh Ingredients:
   - Dice the yellow onion, chop cilantro, & juice 1 of lime, placing into a small bowl.
  1. Mid-Grill Refresh:
   - After about 10 minutes, flip the chicken and spritz it with lime juice. Add extra butter, olive oil, or beef tallow, if desired. Make sure the internal temperature reaches a safe 165°F. Once the chicken is done, ensure the corn has a nice char on the edges, then remove them both from the heat & place into a bowl.
  1. Heat the Tortillas:
   - Once the chicken and corn are removed from the heat, place the tortillas on the griddle and let each side heat up and fluff slightly. Remove the tortillas when they start to lightly bubble.
  1. Rest and Assemble:
   - Once everything is cooked, joyfully assemble your Taco using a taco holder by layering guacamole, grilled chicken, vibrant fresh cut salsa or Tomatillo Salsa Verde, chopped yellow onion & cilantro.
  1. Flavor Finale:
   - Drizzle the taco with a squeeze of zesty fresh lime juice & Jamaican Jerk seasoning. Your delightful Jamaican Jerk Tacos are now ready to be savored!
