Chili Lime Chicken Quarters

Everyone believes poultry is dry when cooked. Not this tender and juicy citrus
flavored cut. Hold onto flight as we dive into making heavenly chicken quarters.

Basic info:

Prep time: 15 min. Cook time: 1.5 hr. Difficulty: 2 of 5. Serves: 4-6. Wood Type: Cherry/Charcoal.

Ingredients:

Steps:

1. On a tray, use olive oil & spray the chicken down.

2. Season liberally with "HSRco Diablito Chili Lime" to all sides add to a zip lock with cilantro and lime juice for up to 2 hours.


3. Start smoker/grill and set to 350 degrees. When grill is ready, place the chicken breasts on the grill for a smoke bath. Take this time to build your sides, from fresh cut salsa/salsa verde, red onion & cilantro.


4. Tip: Cooking below 275 for long time periods dries the chicken out and makes rubbery skin. Can add some "baking powder" to the seasoning to help crisp the skin.


5. After 30 minutes, flip the chicken and spritz with a fresh lime. Internal goal is 175 complete.

6. In the last 3-5 minutes, juice a lime over these quarters.


7. Once internal is correct for dark poultry cuts, pull and rest for 5 minutes before serving.
