Chili Lime Southwest Black Bean and Corn Salsa

Savor the zesty fusion of flavors with our Southwestern Black Bean & Corn Chili Lime Salsa. Packed with hearty black beans, sweet corn, and a kick of Diablito Chili Lime Seasoning, this salsa is a fiesta for your taste buds. Perfect as a dip or topping, it adds a burst of boldness to any dish.

Ingredients:

  • 2-3 tbsp Holy Smokers Rub Co “Diablito Chili Lime” seasoning

  • 2 cans whole corn (fresh, grilled, or frozen & thawed)

  • 1 can black beans, drained and rinsed

  • 1/2 to 3/4 cup red bell pepper, diced

  • 1 medium red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 jalapeño, finely diced (optional for spice)

  • Juice of 1.5-2 limes

  • 1/4 cup Italian dressing (zesty or creamy)

Optional Ingredients:

  • 1/4 cup cotija or feta cheese (optional, for garnish)

  • 1 cup cherry tomatoes, halved

  • 1/2 avocado diced up

Instructional Guide

  1. Prepare the Corn:
    If using fresh corn, grill or roast it for extra flavor, then cut the kernels off the cob. If using frozen corn, thaw and drain well.

  2. Mix the Ingredients:
    In a large bowl, combine corn, cherry tomatoes, black beans, bell pepper, red onion, cilantro, and jalapeño.

  3. Season It:
    Add chili powder, cumin, garlic powder, salt, and pepper.

  4. Add the Dressing:
    Pour in the Italian dressing and squeeze fresh lime juice over the salad. Toss well to coat all ingredients evenly.

  5. Chill & Serve:
    Let the salad sit for at least 15 minutes to absorb flavors. Garnish with crumbled cotija or feta cheese before serving if desired.

Notes:
This is great on salads, burritos, tacos etc. Store in fridge based on the use dates by ingredients used.
