Ingredients:

2-3 tbsp Holy Smokers Rub Co “Diablito Chili Lime” seasoning

2 cans whole corn (fresh, grilled, or frozen & thawed)

1 can black beans, drained and rinsed

1/2 to 3/4 cup red bell pepper, diced

1 medium red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, finely diced (optional for spice)

Juice of 1.5-2 limes

1/4 cup Italian dressing (zesty or creamy)
Optional Ingredients:

1/4 cup cotija or feta cheese (optional, for garnish)

1 cup cherry tomatoes, halved

1/2 avocado diced up

Prepare the Corn:
If using fresh corn, grill or roast it for extra flavor, then cut the kernels off the cob. If using frozen corn, thaw and drain well. -
Mix the Ingredients:
In a large bowl, combine corn, cherry tomatoes, black beans, bell pepper, red onion, cilantro, and jalapeño. -
Season It:
Add chili powder, cumin, garlic powder, salt, and pepper. -
Add the Dressing:
Pour in the Italian dressing and squeeze fresh lime juice over the salad. Toss well to coat all ingredients evenly. -
Chill & Serve:
Let the salad sit for at least 15 minutes to absorb flavors. Garnish with crumbled cotija or feta cheese before serving if desired.
