These Grilled Chicken Kabobs with Holy Smokers Rub are the perfect combination of juicy, flavorful, and tender. Marinated in a blend of spices and herbs, then grilled to perfection, they make for a deliciously satisfying meal. Ingredients:

- HSRCo The Rooster Rub  

  Sweet or Spicy w/ AP BBQ  

- 10 Boneless & Skinless Chicken Thighs  

- Olive Oil as Binder  

- 1 Red Bell Pepper, Sliced  

- 1 Green Bell Pepper, Sliced  

- 1 Yellow Onion, Sliced  

- Wood Skewers Soaked in Water  


Steps:

  1. Preheat Smoker/Grill:

   - Begin by preheating your smoker or grill to 350°F, using your preferred charcoal and wood chunks; we recommend hickory for a rich flavor infusion.

  1. Prepare Skewers:

   - While your smoker or grill heats up, soak your skewers in water to prevent them from burning during grilling.

  1. Dice Ingredients:

   - Dice your chicken thighs into bite-sized cubes and chop your veggies into roughly one-inch squares.

  1. Add Olive Oil:

   - Drizzle olive oil over the diced chicken and veggies, ensuring they are evenly coated.

  1. Season:

   - Season generously with your choice of Holy Smokers Rub Co’s The Rooster Sweet or The Rooster Spicy, complemented by a light layer of HSRCo AP BBQ Rub.

  1. Assemble Kabobs:

   - Carefully thread the seasoned veggies and chicken onto the soaked skewers in an alternating pattern, being mindful not to poke your fingers or hands.

  1. Grill:

   - Once the grill reaches the desired temperature of 350°F, place the skewers on the grill surface. Rotate them every five minutes to ensure even cooking and to prevent burning.  

   Tip: To ensure safe consumption, use a trusted instant-read thermometer to check the internal temperature of the chicken. The USDA recommends a minimum internal temperature of 165°F, but for added juiciness aim for 175-180°F.

  1. Finish Cooking:

   - When the chicken reaches your desired internal temperature, typically around 175-180°F, carefully remove the skewers from the grill. Optionally, add a light coating of fresh barbecue sauce for extra flavor.
