---
Instructions:
- Prepare the Pulled Pork:
- Season the Pork: Rub the pork shoulder with a light coat of yellow mustard as a binder. Generously apply Holy Smokers Honey Bacon Hog Rub on all sides of the pork. Let it sit for at least 30 minutes for the rub to penetrate.
- Smoke the Pork: Preheat your smoker to 225°F. Place the pork shoulder in the smoker and cook low and slow for 8-12 hours, or until the internal temperature reaches 201-205°F for tender, pull-apart pork. Spritz the pork every 2 hours with apple juice to keep it moist.
- Rest and Shred: Once the pork reaches the desired temperature, remove it from the smoker and let it rest for 30 minutes. Then, shred the pork into bite-sized pieces.
- Bake the Potatoes:
- Prepare the Potatoes: Preheat your oven to 400°F. Scrub the potatoes clean, pierce them with a fork, and rub them with olive oil & Holy Smokers Rub Co 40 BBQ Rub.
- Bake: Place the potatoes on a baking sheet and bake for 1 hour, or until tender when pierced with a fork.
- Assemble the Smoked Pulled Pork Spuds:
- Cut the Potatoes: Once the potatoes are done, slice them open and fluff the insides with a fork.
- Top with Cheese: Add a generous handful of shredded cheddar cheese inside each potato, allowing it to melt.
- Add Pulled Pork: Pile on a generous portion of the smoked pulled pork.
- Drizzle BBQ Sauce: Drizzle the top with your favorite BBQ sauce.
- Sprinkle Honey Bacon Hog Rub: Finish with an extra sprinkle of Holy Smokers Honey Bacon Hog Rub on top for a burst of flavor.
- Add Optional Toppings:
- Top with sour cream, green onions, crispy bacon bits, and pickled jalapeños for extra flavor and texture.
- Serve and Enjoy:
- Serve the Loaded Pulled Pork Spuds hot, packed with smoky BBQ flavor, melty cheese, and a kick of spice from the Honey Bacon Hog Rub.
