Ingredients:

For the Pulled Pork:

- 1 (6-8 lb) pork shoulder (Boston butt)

- 2 tbsp yellow mustard (binder)

- 1/4 cup Holy Smokers Honey Bacon Hog Rub

- 1/2 cup apple juice (for spritzing)

For the Spuds:

- 8 large russet potatoes (baked)

- 1 cup shredded cheddar cheese

- 1/4 cup Holy Smokers Honey Bacon Hog Rub (to sprinkle on the spuds)

- 1 cup BBQ sauce (your favorite variety)

- 2 tbsp olive oil (for baking potatoes)

Instructions:

  1. Prepare the Pulled Pork:

   - Season the Pork: Rub the pork shoulder with a light coat of yellow mustard as a binder. Generously apply Holy Smokers Honey Bacon Hog Rub on all sides of the pork. Let it sit for at least 30 minutes for the rub to penetrate.

   - Smoke the Pork: Preheat your smoker to 225°F. Place the pork shoulder in the smoker and cook low and slow for 8-12 hours, or until the internal temperature reaches 201-205°F for tender, pull-apart pork. Spritz the pork every 2 hours with apple juice to keep it moist.

   - Rest and Shred: Once the pork reaches the desired temperature, remove it from the smoker and let it rest for 30 minutes. Then, shred the pork into bite-sized pieces.

  1. Bake the Potatoes:

   - Prepare the Potatoes: Preheat your oven to 400°F. Scrub the potatoes clean, pierce them with a fork, and rub them with olive oil & Holy Smokers Rub Co 40 BBQ Rub.

   - Bake: Place the potatoes on a baking sheet and bake for 1 hour, or until tender when pierced with a fork.

   - Cut the Potatoes: Once the potatoes are done, slice them open and fluff the insides with a fork.
