Smoked Hot Cocoa

Ingredients:

  • 4 cups whole milk
  • 1 cup heavy cream
  • 1/4 cup pure cane sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 4 ounces semi-sweet or dark chocolate squares, chopped

Optional Toppings:

  • Whipped cream
  • Shaved chocolate
  • Grated nutmeg
  • Marshmallows
  • Dark chocolate sauce
  • Smoked whipped cream
  • Peppermint bark, crushed
  • Cinnamon stick

Instructions:

  1. Smoke the Milk:
    • Preheat your smoker to 200°F (or no higher than 225°F) using fruit wood for a subtle smoke flavor, or peach, oak, or hickory for a more pronounced smokiness.
    • Place the milk in a smoker-safe pan and smoke for 90 minutes.
    • Strain the smoked milk through a fine strainer or cheesecloth to remove any particles.
  2. Finish the Hot Chocolate:
    • Transfer the smoked milk to a saucepan over medium heat.
    • Add the sugar and vanilla extract, and stir until the sugar is dissolved. Do not boil.
    • Whisk in the cocoa powder and chopped chocolate until melted and smooth.
  3. Serve and Enjoy:
    • Pour the hot chocolate into mugs.
    • Top with your desired toppings.
    • Enjoy!

Tips:

  • Whole milk is recommended for its ideal fat balance.
  • If using almond milk, adjust the smoking time to 1 hour instead of 90 minutes.
  • Maintain a low cooking chamber heat (around 200°F) to avoid boiling the milk.
  • Get creative with toppings to enhance the flavor and presentation.
