Smoked Mac'N Cheese

Cheese holds all things together. This heavenly & cheesy delight will put anyone in a food coma only to beg you to get up and eat more!

Basic Info:

Prep time: 15 min. Cook time: 1-1.5 hours. Difficulty: 3 of 5. Serves: 8-10. Wood Type: Cherry/Hickory

Ingredients:

  • 1 Pound Macaroni noodles
  • 1/2 Cup Butter (not margarine)
  • 4 tbs. flour
  • 2 Cups of "Half & Half"
  • 4 oz. of Cream Cheese
  • 2 Cups of Cheddar Cheese
  • 2 Cups of Gouda Cheese

The Topping

  • 1 cup Panko Bread Crumbs
  • 1/4 cup of Butter
  • 2-3 tbs. of Honey Bacon Hog BBQ or your choice of bbq sauce.

Steps:

1. Boil a large pot of water with salt (I use SEA SALT) and cook macaroni noodles until they have a bit of a chew and texture but are not too soft.

2. Preheat your smoker to 225 degrees using your choice of wood smoke flavor. I love a cherry/hickory combo.

3. In an pan on the stove place 1/2 cup butter to be melted & whisk in flour.

4. Pour in the "half & half? in a new pan & bring to a boil while mixing. Reduce the heat and whisk in the cream cheese until smooth.

5. Next, whisk in your Gouda Cheese (can be smoked) & Cheddar Cheese until melted. Turn the heat off.

6. Drain noodles & add to the 9x13 pan. Pour the melted cheeses over the noodles and stir in gently until the noodles are coated evenly.

7. In a small mixing bowl, combine melted butter, bacon bits & Honey Bacon BBQ rub or sweet bbq rub of choice with panko bread crumbs. Sprinkle over the macaroni n' cheese.

 

8. Sprinkle on top with more sweet bbq rub of choice, place in smoker for 1-1.5 hours. Serve while warm. Dig in and enjoy!
