Loaded Smoked Brisket Bacon Nacho Fries

LOADED SMOKED BRISKET BACON NACHO FRIES:
Holy Smokers Style: Crispy fries seasoned with Holy Heifer Rub, topped with tender brisket & bacon crumbled, smothered in melted pepper jack cheese, sautéed onions, and jalapeños. A savory, smoky, cheesy indulgence packed with bold BBQ flavor!


Ingredients:

  • 1 bag frozen potato fries
  • 1–2 lb brisket (seasoned with Holy Smokers Brisket Rub)
  • 16 oz grated pepper jack cheese
  • 2 tbsp butter
  • 1 yellow onion, diced
  • Onion chives to top at the end
  • 2 jalapeños, sliced
  • 1.5 cups whole milk
  • Holy Heifer Rub (for the fries)
  • 8 bacon slices cooked, crumbled

Alternative: Use 1 15 oz can of nacho cheese.


Instructions:

  1. Prepare the Brisket:
    Season the brisket generously with Holy Smokers Brisket Rub. Let it rest for at least 30 minutes, allowing the rub to penetrate.
    Smoke or cook the brisket low and slow. Full guide online at (If using a smoker, aim for 225°F for 8–12 hours until it’s tender and juicy & probe tender around 203°F.)
    Once done, slice or chop the brisket into bite-sized pieces.

  2. Cook the Fries:
    Cook the frozen fries according to package instructions. For extra flavor, toss them with Holy Heifer Rub before baking, spritzing with olive oil. You want them to be crispy and golden!

  3. Make the Cheese Sauce:
    In a medium saucepan, melt the butter over medium heat.
    Add the diced onions and sauté until soft and translucent (about 5 minutes).
    Stir in the sliced jalapeños and cook for another 2 minutes.
    Gradually add the whole milk, stirring constantly.
    Slowly add the pepper jack cheese in batches, stirring until melted and smooth.

  4. Assemble the Loaded Brisket Fries:
    Lay the crispy fries on a large platter or directly on a cast iron pan.
    Generously sprinkle brisket & bacon pieces over the fries.
    Drizzle the pepper jack cheese sauce (or nacho cheese) over the top.
    For extra garnish, add more sliced jalapeños and a sprinkle of Holy Heifer Rub.

  5. Serve and Enjoy:
    Serve these loaded brisket fries with onion chives immediately while hot and melty! Pair them with a side of your favorite BBQ sauce to dip.
