Ingredients:
- HSRC Diablito Chili Lime Rub
- HSRC Ultimate Steak Rub
- Olive Oil Spray
- 2 Lemons
- 2 Lobster Tails
- 3 Filet Mignon Steaks
- Thick Cut Bacon
- Fresh Cut Green Beans steamed
- 1/4 Cup Butter, 2 tsp minced garlic & 1 TBS minced parsley
Instructions:
Prepare the steak by allowing it to reach room temperature, resting for 20-30 minutes, and then patting it dry with paper towels.
Next, prepare the lobster tails by rinsing them and using kitchen shears to butterfly them. Cut through the hard tail down to the fin without cutting through it entirely. Gently open the shell, loosen the meat on both sides, and pull it up over the shell.
Season the lobster tails generously with HSRC Diablito Chili Lime seasoning, then refrigerate until ready to cook.
Create the garlic compound butter by mixing 1/4 cup softened butter, 2 teaspoons minced garlic cloves, and 1 tablespoon minced parsley in a small bowl. Set aside.
Preheat the smoker to 400°F (200°C).
Steak:
Season the filet mignon steaks with HSRC Ultimate Steak seasoning & wrap steaks with bacon. Once hot, oil & butter in a large cast iron skillet over medium-high heat. Heat olive oil with the steaks and cook for 5-7 minutes on each side until golden brown and a perfect sear. Avoid peeking. In the last 2 minutes, add 1 tablespoon butter, 1 teaspoon minced garlic, and 1 teaspoon fresh parsley to the skillet. Sear each side until internal temp you desire (135 F for medium rare).
Meanwhile, place the lobster tails in a broiler-safe dish and optionally top each with a pat of butter. Broil for about 1 minute per pound until the meat reaches 140°F and the shells are lightly browned. For 5-ounce tails, this typically takes around 5 minutes.
Serve the steak and lobster with the softened compound butter on the side or melted as a sauce drizzled on top. Pair with side dishes such as salad, steamed veggies, or breadsticks for a delightful meal. Enjoy!
