Ingredients:
- 1 LB Skirt Steak or Ribeye
- Olive Oil for Griddle
- 1/2 Stick Butter
- 2 Orange Sweet Peppers
- 1/2 Green Bell Pepper
- 1/2 Yellow Bell Pepper
- 1/2 Yellow Onion
- 6 Slices Provolone Cheese
- 6 Slices Bacon Grilled
- 3 Hoagie Rolls
**Additional Notes:** Add more cheese, butter seasoning or Cheez Whiz to your liking.
Instructions
- **Meat Prep:** Take a cutting board and thinly slice the steak (putting the steak in the freezer for up to 30 minutes helps this process immensely). In a bowl, place the meat, drizzle oil & season generously with Holy Smokers Brisket Rub (SPG) rub.
- **Veggie Prep:** Using the same cutting board, slice up the orange sweet peppers, yellow & green bell peppers and half a yellow onion. Place in a separate bowl from the meat and also season generously with Holy Smokers Brisket Rub (SPG) rub.
- **Preheat the Griddle:** Start the griddle on high to burn off the old oil & to get the griddle up to temp. Once griddle is up to temp, turn to medium heat, roughly 375 Degrees F.
- **Toast the Buns:** Take your buttered Hoagie Rolls & place them on the griddle for 1-2 minutes or until golden brown, remove & set to the side.
- **Sauté the Veggies & Bacon:** Take a 1/4 stick of butter and more olive oil and place the veggies on the griddle. To the side, place the thin cut bacon & grill until crispy using the bacon grease as a flavor enhancer.
- **Grilling the Steak:** When the veggies are about half done, place a 1/4 stick of butter & a little more olive oil. Then place the meat onto the melted butter. Flipping after 2-3 minutes.
- **Mixing the Veggies & Meat:** After about 6 minutes, mix the veggies, meat into 3 long sections adding 2 strips of bacon to each pile. Top each section with 2 slices of Provolone Cheese, then place the Hoagie Roll Buns cut side down over the piles to melt in the cheese for about 30-45 seconds.
- **The Ensemble:** Take your spatula under the meat/veggie pile & carefully lift up this Heavenly dish & flip carefully, keeping everything on the buns. Serve & Enjoy!
