Who can resist a 2 lb protein cut? This tender and juicy herb crusted
rack of lamb will melt like butter when devouring this delicacy.

Basic Info

Prep time: 15 min. Cook time: 1hr.  Difficulty: 3 of 5. Serves: 2-4. Wood Type: Cherry/Hickory

Ingredients:

Steps:

1. Rub the steak down on all sides with olive oil.

2. Liberally apply Holy Smokers Roasted Garlic & Herb to all sides of steak letting it sit at room temp for roughly 20 minutes to an hour.


3. Set Smoker/Grill temp to 200-215 for low smoke/grill & light smoke tube if desired.


4. Insert probe into center of protein cut, then place on the grill/smoker for 20 minutes.


5. Once lamb hits an internal of 115, crank grill/-smoker to 400 for a nice crust and spritz with butter.


6. Pull the lamb off once internal hits 130-135 for desired internal temperature.


7. Pull off smoker/grill and let sit for 7-10 minutes and squeeze lime juice over the top. Dig in and enjoy!
